Healthy Habits...Sweet Potato Soup!

I hope to share Healthy Habits that I've already incorporated into our family or new tips, tricks, and recipes that I'm trying out.

This recipe is from a friend who is a wonderful hostess and a great cook. She always has the best recipes for our get togethers and this one is a keeper!

This soup is full of healthy vegetables and can be meal on its own with a side of whole grain bread. It is delicious the day you make it and as leftovers for lunch! I usually make a double batch and freeze one for a week when I'm busy and need a quick dinner. ENJOY!

Sweet Potato Veggie Soup

  • 1 tablespoon olive oil
  • 
1 large onion, chopped
  • 2 large stalks celery, chopped
  • 2 1/2 teaspoons Italian seasoning
  • 
salt and pepper to taste
  • 
1 (28 ounce) can crushed tomatoes
  • 
5 cups vegetable broth
  • 2 large sweet potatoes, peeled and diced
  • 
2 large carrots, sliced thin
  • 6 ounces green beans, cut into 1 inch pieces
  • 5 cloves garlic, minced

Heat oil in a soup pot over medium-high heat. Saute onion, celery, Italian seasoning, salt and pepper until tender, about 5 minutes. Stir in tomatoes, with the juice, broth, sweet potatoes, carrots, green beans and garlic. Bring to a boil; reduce heat to low and simmer, stirring occasionally, until vegetables are tender, about 30 minutes. Serve and enjoy!

*Get creative...add in veggies that your family loves or veggies that look good at the store. Beans would be a great addition too! You can always add more vegetable broth if the soup gets too thick. Have fun cooking!
